Biozoon Iotazoon Mini Thickener

Thickener and gelling agent derived from Carageenan, a polysaccharide, extracted from red seaweed. Iotazoon sets into a soft elastic gel, similar to a traditional custard. It is mixed into cold liquid and heated to activate. Gels may not be heat stable but may be frozen then thawed. When Iotazoon is mixed with milk products, it thickens about five times more than water based products because it reacts with calcium. If calcium is not present, it can be introduced by adding Calazoon. Gels made with Iotazoon liquefy when blended but return to gel after sitting.

Approximate dose is 1 Tablespoon with 525 ml of milk or cream. Must be heated in order to gel. May also be sprayed from an iSi whipper. Ingredients: Iota Carageenan, Maltodextrin. Common Applications: foams with milk products, gels in the presence of Calcium. 100 ml bottle.
